History of National Bubbly Day

Wine, even sparkling wine, dates back centuries, appearing in the writings of monks and other holy people. Signs suggest that some forms of alcohol are the result of fun crashes. Traditionally, sparkling wine is a celebratory drink that gets special attention during the festive period.

The Champagne region in France has managed to compete with the wine of the neighboring region, Burgundy, which produces a velvety pink textured wine from Pinot Noir grapes. Unfortunately, the chilly weather of Champagne and sour grapes caused problems. Sugar, which must be added to sweeten the taste, remains insoluble in alcohol and will foam and often explode. The bottles that survived this incident had bubbles in them! Of course, this received the support of the French Royal Family. Much of the region's success has been attributed to the monk Dom Pérignon, whose idea was to use grapes in carefully de-skinned red wine - a major development in Champagne production.

After they began shipping this wine around the world, it also became popular among the English aristocracy, and was primarily a luxury drink. In pre-Industrial France, however, most winemakers still managed to get rid of air bubbles. However, the popularity of champagne has made it a deliberately made luxury item.

Countries like Italy and South Africa also have rich winemaking histories dating back to the 17th century. At home, sparkling wine has long been produced in the Golden State, except during the Prohibition period. While use of the name 'champagne' has been restricted, historic winemakers continue to produce California champagne.

The American branch of Freixenet, known as Freixenet Cava, was established on this day to celebrate the wine that makes all celebrations stand out. Legend credits cava making with a winemaker named Josep Raventós Fatjó, who wanted to create bubbles in his wine. A native of Penedès in Catalonia, the Josep family has been making wine under the Codorníu label for centuries. When he wanted to try his hand at making 'sparkling' wines, he mixed Macabeu, Parellada and Xarel-lo grapes, traditional grapes found in Penedès. His request to dig caves ('cava') inspired the name 'Cava'.
